From the oven to the tortillería, the evolution of the Tex-Mex kitchen in Dallas reflects the growing and enduring presence of Mexican-American culture in North Texas. The contributions of the Martínez family, owners of the El Fenix restaurants; the Luna family, proprietors of the first tortillería in Dallas; and the Cuellar family, owners of the El Chico restaurants, put the name "Tex-Mex" on the Dallas food menu. The conception of the staple frozen margarita by Mariano Martínez further attests to an evolved Tex-Mex cuisine.
